The Chop Stop Journey: “What’s in Your Chop?”
In 2009, Mark Kulkis, a devoted fan of chopped salads, grew frustrated with the limited quick-
service restaurant options. The few places offering chopped salads lacked variety, leaving his
cravings unsatisfied.
Determined to create a solution, Kulkis began experimenting in his kitchen. He chopped, mixed, and
crafted unique flavor combinations that earned rave reviews from friends. Inspired, he decided to
introduce Southern California to his innovative take on chopped salads by opening a restaurant.
Kulkis envisioned a smart, clean, and professional dining space with a sharp, modern image. After
extensive search, he selected Burbank, California, as the launchpad for Chop Stop. To bring his
dream to life, he partnered with Joey Gonzalez, a seasoned restaurant operator, as Vice President
of Operations. Soon, the chopping began.
Burbank embraced Chop Stop, and within four years, the brand expanded to five thriving company-
owned locations in Southern California. Buoyed by success, Chop Stop entered its next phase:
Franchise Expansion, growing to 28 locations over the following five years.
The COVID-19 pandemic hit hard, halving Chop Stop’s footprint. However, after restructuring, the
brand is once again on a path of measured growth.
In 2024, Kulkis retired, passing the reins to Joey Gonzalez, who became President and Owner. With
years of dedication and a deep understanding of the brand, Joey leads Chop Stop with a renewed
focus on growth and staying true to its mission: delivering fresh, delicious, and fast dining
experiences.
Under Joey’s leadership, the brand continues to evolve. He promoted two key team members,
Michelle Sellers and Monica De La Cruz, to Junior Partners. Together, they remodeled Chop
Stop’s flagship location in Glendale, unveiling a vibrant new look and fresh logo.
This leadership team is propelling Chop Stop to new heights with exciting menu additions like Elote,
Poke, Miso, Garlic Steak, soups, and more homemade dressings. Their shared mission is simple:
encourage more people to make SMARTER choices when eating.
